Recipe: Spicy Bean & Rice Bowl

This spicy bean and rice bowl is the perfect budget meal when you’re craving something hearty and satisfying. With just a few ingredients and one pan, it’s super quick to make and easy to customise to your personal liking. Luckily, it is also filled with protein and fibre, making it an ideal choice for students looking to eat well without spending too much money as well!
Ingredients
1 can mixed beans (or your preferred bean!)
150g rice (white or brown)
1 tbsp olive oil
1 small onion, chopped
1 tsp cumin
1 tsp paprika
1/2 tsp chili powder (if you would like that extra kick)
1 tbsp soy sauce (optional)
Salt and pepper to taste
Steps
1)Cook the rice: First, prepare your rice according to the packet instructions. While it's cooking, move on to the beans.
2)Sauté the onions: Add the olive oil to a large pan and heat the pan over medium. Sauté chopped onion for 3-4 minutes until it is softened and golden.
3)Add the spices: Add in the cumin, paprika, and chili powder. Cook for around 1 minute, so that the spices can release their aroma.
4)Cook the beans: Drain and rinse the beans, and add them to the pan. Stir well and allow it to heat through for around 5-7 minutes.
5)Mix all together: Once the rice is done, mix it with the beans in the pan and stir. Add a pinch of soy sauce, salt, and pepper, and stir everything together for a further It will take approximately 2 minutes to combine the flavours.
6)Top and serve: Serve the rice and bean mixture in bowls and top with toppings of your choice, maybe some sour cream, hot sauce, or fresh herbs, to make it that little bit special.
The dish is affordable and it fills you up and gives you energy without costing a lot!
